I installed a peerless assassin in another gaming rig and man o man. The cooler is huge and it took over one of the dimm slots. BUT it works great. I installed it on a 5800x3d.

Funny that you mention the burst assassin. I just ordered it this morning. I don't like that the peerless installs over the ram.

The rig I am building will be simple and some gaming will occur.

Specs:
5700x3d
nzxt h7 flow
7 fans. 3 top, 3 front and 1 rear.
burst assassin cooler
850 corsair psu
6950xt
32gb t force delta 3600
b550 f gaming

Dual tower coolers like the Peerless Assasin are highly recommended for gaming rigs. And as far as I know, most of these coolers if not all have the facility to adjust the front fan by manipulating the holding bracket for a couple of mm. So even if it occupies the RAM slot you can still adjust and fit the RAM unless your RAM has one of those humongous heat spreaders.

Point is, the cooler is more important than the RAM heat spreader as it makes more difference in overall performance. Those tall heat spreaders are fine with AIOs, but if you are going for a dual tower cooler, my advice will be to get one of those low profile RAM kits rather than the tall ones.
 
AFAIK, any dual tower cooler that has 2x25mm thick fans is going to interfere with the RAM. The ones that have a "slim" 15mm fan on the front and/or an offset fin stack will clear the RAM slots entirely.
