I am a big fan of games like Fallout Skyrim (basically big open world RPG's) i also do some fast paced games as well like overwatch/Rainbow Six Siege. Do you think it would be best to go for the 144hz or 4k?

That's entirely up to you, your specs are suitable for one. 144Hz is amazing, though if you're used to 60Hz you can crank up the settings more and pretty much never really suffer from framerate drops. If you go for 144Hz, you'll see be able to play at high/very high settings and get 90+ fps, usually.
