On the Logical Increments website, are all those PCs on the pricing list for gaming? Would you recommend taking parts from the "Good" tier and adding a few more expensive parts for Graphics and RAM from more expensive tiers or would the more expensive parts not work well with the cheaper parts from the "Good" tier? to some extent, yes, you could grab a 300 dollar graphics card and a 70 dollar motherboard and a 100 dollar cpu and it would work, as long as the sockets fit and the power supply can... supply it all.
just do some research on the parts, a really bad CPU would hold your powerful graphics card back, a cheaper motherboard with an older socket might limit your upgrades in the future, a bad power supply might leave you hanging when you most need it.
but it can be done, sure, as long as the round pegs fit in round holes.
