Just finished my 3rd pc build and my i7 7700k is reaching 60c on idle, and given any tasks or underload the cpu spikes upto 100c
any help?

The cooler is running fine it’s a Corsair h80i v2

Being the cooler is "running fine" and you are still very hot I would be focusing on the cooler mounting...as well as making sure you are pumping coolant and your fans are spinning.

I assume you used thermal paste correct?
...and I assume you are sure you are idling correct?

At those temps things are definitely not fine and I'd be looking at the cooler itself. Is it seated properly? Is the pump running? If it is, is it plugged in the right header?Remember that AIO pumps need to be running at 100% so use the CPU_OPT header or any 3 pin and have it run at full speed.

The AIOs fail all too frequently for my tastes (slow degrading due to pump failures, micro-pressure leaks in radiators, contaminants, algae, etc), or, perhaps it just seems that way from wayyy too many folks having issues with them, where it seems lucky to have even half the folks using them have them last 18 months....
