I recently purchased a rosewill photon 750w 80+ gold modular psu and was just wondering if 750w would be enough to support two of these monster cards along with my processor

Solution
Extremely doubtful.

Any overclock would make it a definite "no" (Not safely, anyway).

With only 750 watts you're not leaving room for much else. Remember, everything draws power, HDDs, SSD's even if it's minimal.

I ran two 290x's off of a Seasonic 750w, for a week while I waited for a 1000w PSU, It was obvious once I got the new one how much more stable the two cards were.

It will run, but it's not a safe idea. You'd want a 1000w if you really want to run that setup safely. (edit: Assuming you want some headroom for the future or any overclocks)
It's bit short of what I would put in

Here is Guru3D's power supply recommendation:

AMD R9 390 and 390X - On your average system the card requires you to have a 550~600 Watt power supply unit.
AMD R9 390 and 390X Crossfire - On your average system the cards require you to have a 800 Watt power supply unit as minimum.

If you are going to overclock GPU or processor, then we do recommend you purchase something with some more stamina

I'll probably just go for a single card now and swap out my psu and get a second card a few years down the road, thanks a bunch for the insight!

Keep in mind those 290-390X cards are rated at 300W EACH. So two in CF is supposed to use ~600W. You have a 125W CPU so your total system draw should be around 750-775W. No way I'd try it with a 750W. 1kW sounds like a good idea, or any 900+ QUALITY unit.
