I'm debating on getting a 7990 or 7970 Crossfire. The 7970's will be cheaper, but will have more heat (not as much of a problem since I'll have 7 case fans on my Phantom 530 :)) and the 7990 is basically the same thing but lower clocks. I'm confused. And no, I won't be doing some 1440p shit, just 1080p, or even 1336x768. I just want a card (or cards) that will be able to max out any game for at least 2-3 years.

The specs:

CPU: AMD FX-8350 4.0GHz 8-Core Processor ($179.99 @ Amazon)
Motherboard: ASRock 970 EXTREME4 ATX AM3+ Motherboard ($79.99 @ Newegg)
Memory: Corsair Vengeance LP 8GB (2 x 4GB) DDR3-1866 Memory ($49.99 @ Newegg)
Storage: Kingston SSDNow V300 Series 120GB 2.5" Solid State Disk ($79.99 @ Microcenter)
Storage: Western Digital Caviar Blue 1TB 3.5" 7200RPM Internal Hard Drive ($58.98 @ Outlet PC)
Video Card: ????????????????????
Case: NZXT Phantom 530 White ATX Full Tower Case ($129.99 @ NCIX US)
Power Supply: Corsair CX 750W 80 PLUS Bronze Certified ATX12V Power Supply ($56.50 @ Newegg)
Total: $635.43

Since power is not a problem, your best option is to go Crossfire HD 7970 OC. It will offer better performance, OC'ing, cooling, and price. The HD 7990 does not cool as well due to the smaller form coolers used to cool two GPU's on a single card. It's great if you don't have space but you're better off with two 7970's.
