8GB Kit (4GBx2) vs. 8GB =4GBx2 Non Kit

As a general rule of thumb, I purchase a 4GB X 2 retail kit if possible, and if I can't get that, I purchase the exact model X 2 like you are mentioning. The kits are always "matched", so you know they work 99.99% of the time. Buying the same make/model RAM should work 99% of the time (only a slight possible issue - usually dealing with RAM that are done from different runs). Mixing model numbers works sometimes, but you take your chances....maybe a 50/50 deal.
