Yes you are fine. Set the fans all to quiet mode allowing them to ramp up when needed. I have a similar setup and your setup with 3 front fans bringing air in and then 2 extracting at the top with one extracting at the rear will do the best job both on the CPU and the GPU...My case before was the Cooler Master H500P which had pretty much the same airflow setup as yours and it was perfect..

The simplest way I use is via the BIOS fan control. All I do is set all my fans individually to quiet mode. This for me is the best option and the easiest. Setting to quiet mode allows the fans to be at there lowest and as temps rise the fans will auto ramp up as temps increase. Thank you. When i need the quiet case, i think important is stay under 800RPM. When i´ll use 70%RPM is 1260 RPM (i think it would be a loud)

Yes you can but I would go...I would put the 3 front fans on SYS_Fan 1/2 so number 4 closet to the main power cable 24pin! The Noctua on CPU fan and the remaining 2 rear/top fans on the SYS_Fan next to the CPU power cable.
