It's not any less secure than talking on the phone in a lot of other places and I doubt that you're even correct about anyone being able to listen in on it without equipment built specifically to do that and even then, again, that would mean that nowhere is truly safe anyway.
A MacBook Air at 200-400 mph isn't nearly as dangerous as a lot of the luggage or passengers moving at such velocity, especially the plane itself. It's a very poor excuse to not have a computer on the flight and even then, it's a far worse excuse with much smaller devices.
