after 8K you literally can't see the difference

Yes, but on a 500 inch screen you can see the difference. That's how they have been selling it for years to consumers.
That is why 8K makes no sense on a 32 inch screen, as you would not be able to read the text without enlarging it due to the PPI density. Same reason why most 4K screens are 32" or larger.

Even if it took up your entire FOV without looking in, you wouldn't see the difference between 8K and 16K.

There are always sales techniques to make you see the difference. It's just like they claim you can hear the difference in audio quality between 16 bit 44.1 Khz and 24 bit 96 Khz sampling rates for audio files.

And it's true, you can hear the difference, but only if your audio equipment is the price of a small car.
That's why it's a selling feature, for the 1 or 2 people who have access to such equipment.
