Hey, I'm not a very great "pc guy" but I know something.
So what I am wondering is how does this preform in games like BF4? and ofc Minecraft, does it do well? And do I need 16GB?

Yes. Most processors come with an Intel stock cooling fan, and they don't perform that well. However, the i7 3820 doesn't actually come with one, so you're certainly going to need an aftermarket CPU cooler. You could go for a closed loop water cooling system, but there are air coolers that do as well for less. I can't offer a solid suggestion, so have a read of this. It should provide some starting points for you.

And why would I want two 4gb? what's the difference?

If you run RAM in dual channel configurations, you double the communication between the memory controller and RAM, which can increase performance somewhat. However, if you want to upgrade to...
I think it looks ok, but you'll want an aftermarket heatsink probably, the Intel ones aren't great...I'd also recommend 2x4GB of RAM, unless that's what you're buying. For straight up gaming, I think 8GB is fine. Not a pro, so I don't really want to give too much advice...

However, if you want to upgrade to 16GB, then I'd recommend getting one stick of 8GB now, and then another one of the same model shortly after, if money is an issue.

I've noticed that the motherboard has room for 8 sticks of RAM, so alternatively you could get 2x4GB now, then add another 2x4GB set later and run a quad-channel configuration. Quad channel would give you even wider memory bandwidth. Personally I would do this.
