What is the faster Ethernet cable? CAT5 or CAT6?

The cable is no faster than your NIC and router and service provider. So using cable that's better than the highest speed that the slowest of any of the three is capable of is a waste.

That said, Cat 6 does have potentially better shielding, for better isolation in extreme high noise environment. Not likely a problem for other than long runs in a tightly packed cable tray. But if that is an issue you might get better throughput due to fewer re-transmits, but not exactly higher speed, with Cat 6 vs. Cat 5.

In a home network with gigabit hardware, there is NO difference between a commercial Cat5e cable and Cat6 or Cat6a cable.
If you are in a commercial environment, the tighter twists of CAt6a can be more resistant to noise.
If you have 10GE, then the minimum recommended cable is Cat6a.
