Is there any way I can sort through many folders to find just pictures? instead of having to check all of them one by one? It's like 1000 folders.

I tried searching for ".jpg" for example, but it also grabs me some .json files for some reason, which means I cannot select all and cut paste it out of there. Maybe isolate the json files?

Not sure why you got .json in the results. Have you tried putting quotes around ".jpg"? That usually tightens the search. You can also add "-json" (without quotes) to the search to omit anything with "json."

If that doesn't eliminate non-JPGs, first do the search, as you've done. Then make sure you're in Details view mode, where there are headings on top. Click on the "Type" heading...
Everything search engine is great for that, ALT+p will even enable preview.

It just found over 58,000 jpegs on my hard drive in 1 second flat.

Sortable by file name or sortable by directory by clicking at the top of the results columns. You can copy files direct from the results window to some other destination with a simple highlight/copy/paste.

It works strictly on file names, so:

Searching for el will find all files with that text string in the file name....elvis, travel, elvira, delta, element, and so on.

You can also use the Group By function to have the file types neatly separated.

At this point, you can highlight all the JPGs with your cursor, and copy/move them as necessary.

That's how I'd do it in File Explorer. But if you use a third party file manager, you'll likely have many more options that make the task easier.

Quick question though, is there any way I can know which of these many folders has info on it? Properties of the folder that contains all these folders tells me that I have 838 folders but 8 files. Is there a way to find the folders who have those 8 files without opening each one?
Install and run either WinDirStat, or WizTree.

Run as Administrator, selecting only the drive in question.
