Question Aqua Elite 360 v3 will not mount to the provided AM5 brackets ?

I am losing my mind and have been trying to get it on for 2+ hours now. The AIO has 2 spring screws on either side that latch onto the AM5 bracket, but when I align one screw and hinch it on it becomes impossible to get the other screw on as it hovers too high over the bracket. I am too afraid to put pressure on lest I bend the pins of the installed CPU or straight up break the motherboard.

You thread the spring loaded screw a couple of turns till it bites onto the mount, then you do the same on the other end. If you expect to tighten one side then move to the next, the tension from the spring will prevent you from doing the same on the other end.

Looking more into the AIO, didn't you get clips on the AIO, like this;

My model does not have clips like that, no.

No matter how loose I have the screws it will just not let me put the other one in. I could have them perfectly aligned and then the moment I screw even once the other side pops out.

Now on top of being terrified of bending pins I am also terrified I might have stripped the damn thing or something.

It'll have quite a lot of resistance so don't be too worried. Get about 3 or 4 turns on one side, then go to the other.
