[SOLVED] Are these parts viable?

Hey there yall I try to compose a PC on my own and I have my eye on a few parts but I dont know much about them.
Ive seen a view reviews about the Ryzen 7 and the Asus Vega and Im quite happy with them.
I know that a lot will tell me to take Nvidia instead but Im a AMD man and I wanna stick to the brand, and take the hit in performance if must.

The problem im having is, that Im not sure if the
Cooler will be enough?
the Power supply will be enough?
Is everything fitting the casing?
Whats the difference between all the RAM chips? does price matter?

Im not looking to make some fancy eyecandy. I dont need LEDs and showwindows. I just wanna PC that runs smoothly for many years to come and can perform some games decently.
My every day usage does not put a lot of stress on it.

gigabyte GA AD350M ds3h V2 ( thats the Mainboard)
AMD Ryzen 7 1800x WOF (thats the CPU)
alpenföhn sella (thats the CPU cooler)
G.skill DIMM 8GB DDR4 2666 (thats the RAM. ill take 2 for 16GB)
ASUS RX VEGA 56 AREZ STRIX OC GAMING (tahts the GPU)
Corsair Carbide 200R Tower (Thats the casing)
Cooler Master Masterwatt 750 (thats the power supply)

What are your thoughts?

The cheapest RX VEGA 56 costs 330$

The cheapest RTX 2060 costs 370$ and is better than the Vega 56

The cheapest RTX 2070 costs 490$ and is better than the Vega 56

So, you can get a better PC with an Ryzen 7 2700 and a RTX 2070, for 30$ more, or get an RTX 2060 and save 30$, but if you want raytracing try the 2070.

That all looks good, except for the PSU, Gigabyte does not make their own PSUs so thats probably a rebranded PSU from some Chinese OEM. From the reviews im seeing that PSU is known to fail and cause cascading failure in systems. Stay away from it. What other options do you have?
