assuming that it does not need to do any graphic rendering.

I do not know what a minecraft server entails. If it requires graphical rendering then a bigger budget is needed.

yea that looks good, a antec earthwatts can handle an upgrade to a radeon hd 7850 down the line.

Motherboard is OK. Case is mini ITX which I am not sure if it compatible with mATX.

Sorry about forgetting a cdrom drive. Looks like you are good to go for a server assuming your internet can handle it.
