Hi, Im doing a new ITX setup using the ASUS STRIX Z370-I GAMING but I do not know about connections and ports as far as the mobo is concerned.
I plan to put the following parts (apart from the processor, GPU and RAM) using a Phantek Evolv itx or nzxt H200i as a case:

-CORSAIR HYDRO SERIES H115i
-be quiet! BL071 SILENTWINGS 3 PWM 140mm x 3
-2 SSD
-1 HDD

My doubts are:
* If the 3 PWM fans I want to put. Can connect the 3 directly to the itx mobo? or I have to buy a PWM controller?. In that case, what do you recommend?

*In case I want to add LED strips, after connecting everything said above. Would there be slots to connect them? or if I change my mind and put about 3 RGB PWM fans + LED strips. Will I need a RGB and PWM Fan controller? or they use the same controller?

Yes you can....but you need a splitter to split to 3 fans. You don't need a PWM controller.

The total draw of all three fans can't exceed to the max output rating of the header which I can't find but it's probably not less than an amp.

There is an RGB header on the board. Th LED strips would connect to that.

I think you might not be able to put that many things on the RGB header. In that case.....get a controller for either the fans or...

I think you might not be able to put that many things on the RGB header. In that case.....get a controller for either the fans or the strips and use the MB header for the "other".
