Hello everyone! I am looking to build a server with my ryzen 7 5700g. I am looking for a server with more than 2 pcie 16x slots along with a maximum support for 128gb of ram and serveral m.2 ssd ports.

Why two x16 slots and multiple m.2 ports? Quantify "multiple".

Mass storage? How many total storage devices? How many terabytes? So far, not much to go on to understand your needs.

Through the network (a typical gigabit LAN?), the speed of NVMe is negated completely.

Accessing it from other systems, you would not be able to tell the difference between data that lives on an NVMe, SATA III SSD, or maybe even an HDD.
The LAN is the limiting factor.

On a 10gbe LAN, you may see a difference.

But that is a BIG expenditure for a simple house server.
