Depends on your fan configuration but in general:
Fan in front: intake
Fan in back: exhaust
Radiator fan in top: exhaust
Fan bottom: intake

For the radiator fans, all of them should be in the same direction(eg exhaust).

I would go for the NZXT Kraken X61, it performs great. The fans that comes with it also perform well and are pretty quiet.
Here's a review: http://www.hardocp.com/article/2014/07/10/nzxt_kraken_x61_aio_liquid_cpu_cooler_review

The cooling unit comes with two fans, you can use those and it will perform just fine.
You can always add some extra fans, those you can connect to the motherboard and can be controlled via software.
The case fans can be connected on the motherboard as well.
