My main purpose is 1080p Video Editing and competitive gaming (minimum settings). at 120 fps. Also is this a good time to build a system? I already have a graphic card. Or waiting till holidays / cyber Monday?

Generally Black Friday and Cyber Monday is a way to clear out inventory that didn't sell. Usually there is a good reason.

Ryzen 5 5600X should be possible with that budget. About the best gaming CPU you can get at the moment. Arguments could be made for the Intel i5-11600K running at 5.2 or 5.3 all core, but then you need a decent cooler and an expensive motherboard.

Thanks. What's the best B550 full-size motherboard? Don't need built-in Wifi or dual ethernet.
 
Keeping it under $500, this would be my pick. I have used said board, before, in another build, for a friend. First one did have issues, but it was literally a launch week board, so not exactly surprised. The top M.2 slot didn't work. Just took it back to MC, got a replacement, and the second one worked just fine, and has been fine several months after the fact. Friend has a R5 3600 in his board.
