Best SSD/HDD Setup

I currently have a 128gb SSD with my OS and applications and have a 1tb 7200rpm HDD for my steam games and media. I am filling up the 1tb drive pretty quickly and would like to expand for hd game capture, but I'd also like to have a backup for when things go south. Would I have to buy another 3 1tb drives and raid them to get 2tb of storage space with backup? Is there another raid configuration that would make more sense? I'm not looking for a major speed increase because these are just for storage.

Also would an external backup be a better way to go in case of PSU failure?

All backups should be external. That's what makes them a backup. I'd buy a 3 or 4TB drive for data and put your 1TB in an external box. Plug it in as needed for backups.
