I have a newly built PC with the following components; ASrock B550 mobo, AMD 3700x, G.Skill 32 gigs Ryzen Z Neo 3600 ram
The following parts came from my old PC; Corsair 850w psu, EVGA GTX570

I know that my GPU is the weakest link, and I am looking at two GPUs right now; Sapphire 580 and Sapphire 5600xt. I don't game but I do a lot of photo editing. Will a more expensive card give me better image quality? Or is the 580 enough for what I do?

Solution
I don't think that you will get much better image quality, look at your monitor(s) for image quality in photo editing. Also, if you use Adobe products use a small SSD as a scratch disk, which will benefit you greatly. HERE are some recommendations from Adobe for scratch disks.
