Hello,
I would greatly appreciate if anyone could point out insufficiency or cost ineffectiveness with my build, which will be used for gaming and lite blender work.

I would rather pay less than more. Games such as Elden Ring and POE2 come to mind, and anything new that might pop up.
The blender work I'm used to can be done with no problems on my current setup, which can't even run PUBG.
 
You want to stick with 1080P with that gpu or you will be hating life.

If you're planning on sticking with the 1440p display then you should really consider spending more on the video card side. I'm not sure about whether or not your use case allows for AMD video cards, but if so it looks like you can get 6700 XT/6750 XT/6800 for under €400 and on the nvidia side 4060 Ti (8GB only though).

The alternative is either going with a 1080p display or planning on running your games at 1080p.

Thanks for mentioning this, it seems Blender favors Nvidia cards...
This is tricky.
I will probably go for 1080p then, unless anyone has an idea for a 1440p nvidia build for ~1399€

3060 is fine for 1440p high settings for most games released 2022 or earlier, if you're OK with using DLSS. Would be preferable over Radeon for Blender. A few reports out there for the 4060/4060Ti being superior to earlier series for visual AI work.

May I suggest a PCIe 4.0 NVMe SSD.

You could probably get away with a 650W PSU and smaller CPU cooler, if you're not intending to upgrade the CPU/GPU later.
