Building a new computer, help!!

Last time I built a computer was maybe 4 years ago and I have not kept up with technology. Now that my previous build is becoming slow, and I just saw a nice refund from my school, I'm looking to build again.

With that being said, I'm kind of lost haha.

My general uses will be for trading, so not CPU/GPU intensive. I do mess around with photoshop every now and again. I also play some old school games, so again not intense. I do plan on watching blu rays and HD material (1080p). I also plan on either going with 2 24" inch monitors, or 1 large 30 something 1080p HDTV, but until I decide or see a great deal on either, I'll stick with my single 19" from the previous build.

I pick these because they are cheap, and well the reviews are still pretty good. i can always bump up to the OCZ platinums for $150. I have OCZ platinums in my previous build.

Video Card: NO IDEA, need 1080p, for HDTV or 2 monitors. No problem handling HD video.

I have 4 other hardrives along with 4 externals so space is not a problem.

Power Supply: PC Power and Cooling, not sure what kind, maybe 700watt?

Oh and I've been contemplating whether or not I wanted to watercool. I don't plan on overclocking, but my computer now is pretty loud so I'd prefer as quiet as possible.
