I have been looking at a lot of setups for doing some video editing and gaming.

I have a friend who is looking to get rid of an old computer he bought as a set (this one : http://www.amazon.com/Acer-ATC-605-UB11-i5-4440-Windows-Desktop/dp/B00KVSDV0W)

I wanted to know if you think it would be advantageous of me to buy his rig and just plug in maybe a dedicated GPU, put in a solid state drive, and maybe upgrade the RAM to 16GB.

Do you think I would run into problems with the stock motherboard or power supply that would make buying his rig not worth $200?

I would say it's worth about that but you would need to replace the PSU with a more powerful one if wanting to add a graphics card to it. Considering the chassis design, I'd really recommend a modular PSU for that. For RAM upgrades, I'll suggest replacing both stick with a kit recommended by one of the manufacturer's Memory Finder Tools (almost all memory brands have one - see below - they'll guarantee proper operation in your system).

Examples of memory finder tools (there are others)
Kingston Memory Finder
Crucial Memory Finder
Corsair Memory Finder
