Currently I have a GA-A320M-S2H mobo, Ryzen 7 1700x 3.5ghz, and Ballistix Sport LT 8GB Single DDR4 2666 MT/s. I wanted to know if I could add a stick of 16gb of DDR4 to the existing 8gb, as long as the 16gb maintained the 2666 MT/s.

Possible RAM that I'm looking into:

Crucial 16GB Single DDR4 2666 MT/s

Edit: The RAM I plan to get: Patriot Viper 4 Series DDR4 16GB 2666MHz (PC4-21300) SODIMM Single Module PC Memory (PV416G266C8S) https://www.amazon.com/dp/B01KBKIJY2/ref=cm_sw_r_cp_apa_Ik.0BbFGVWHE3

Solution
It's risky to mix and match memory modules. They may or may not be compatible.
You should try selling your 8gb module and then buy a 2x8 GB kit.
