I'm building a new pc for Gaming/Work and your feedback would be much appreciated.

For the Intel Build

Question.
  1. Can I go for the cheaper motherboards or should I get the pricey ones?
  2. Is the INTEL or AMD stock cooler suffice if yes how many Celsius 70? or over 80+?
The Goal is to play latest AAA titles w/ 1080p High(Ultra if can) in a 144hz monitor and for work a minor video editing/photoshop related.
 
For a gaming machine, you need a motherboard with good VRM to keep the thermals on check during high load.
Also, stock coolers form either Intel or AMD are better avoided. Get something more robust as those intense gaming loads can be stressful for the stock coolers to handle. You need to keep adequate headroom for temps to avoid thermal throttling.

What is your total budget for the tower?

Decent build, since you are not in the USA I personally am not going to go through the trouble to find cheaper parts for you but this is pretty solid over all. I would recommend something like the CoolerMaster 212 Black for a decent cooler that doesn't cost allot.
