Can my PC run a GTX 1080, single and SLI?

Short answer is, yes, you can run it.

But, i personally don't see much of a reason to make that upgrade. What kind of monitor are you running? The sli will probably raise you minimum frames, but you'll still average out on frames about at the same amount.

I would keep the 980 for a while still

About how much of a performance increase could I expect from upgrading from a single GTX 980 to a single GTX 1080?
