Can this setup run dual monitors?

Your 1080 supports up to 5 monitors. It has 2 HDMI, 2 Display Port and one DVI-D port on the back of the card. You will be able to have 5 monitors connected to the card so you will be fine with 2. You can tell by looking at the end of the card which goes where you remove the expansion slots on the back of the case.

Ummmm? No? HDMI is the name of the port and the name of the cable. I'm fairly certain the don't differ in type like DVI cables do. E.g DVI-D, DVI-I

There are five output ports but I believe the number of simultaneous monitors is still 4. And the total simultaneous resolution also factors into the number of monitors supported.
