I'm planning on buying a GTX 1060 6GB soon.
-I know prices are pretty high and people are staying to wait but I'm pretty impatient

What are key differences between these brands: EVGA, MSI, ASUS, GIGABYTE
-How big of a difference is there in terms of FPS performance?

Out of the 1060 6GBs available, which is better overall (cooling, gaming, etc.)

probably the best, has the highest clock speeds and is the only one with a deal for a free headset when you buy it.

Honestly they will all perform close enough where you won't be able to tell the difference. I would also think about size, what video outputs you want/need, and which one fits your builds aesthetic if you care about that sort of thing.
