I have 2 x Asus DSL-AC68U modem routers and thought I could use them for AiMesh, but Asus say no. Is it possible for me to use one as a modem/router to connect to my ISP and connect the other one in AP mode to the first?

That is not AP mode there should be a setting that actually says AP.

Since that box does not appear to have a actual wan port it likely easier to use the method that works on almost any router. Disable the DHCP server, set the lan IP to be in the same network as the main router being sure it does not conflict, hook to any lan port. You now have a AP.

I would not worry a lot about the mesh. It is mostly marketing to get people to buy new routers. It is mostly just a slightly fancier form of wireless repeater. You do not want to use any form of repeater unless you have no other option. Using AP like you are is your best option to extend wifi converge.
