Considering an upgrade, need help deciding

Currently, I have:
Asus P8Z77V-LK Motherboard
64GB SSD (used as boot drive)
i7 3770 CPU
640GB 7200RPM Hard Drive (used as drive for programs)
1TB 5200RPM Hard drive (used for backups)
750W PSU (forgot brand)
Asus Radeon 5850 Direct CU GPU
2 monitors, one 1600x900 and one 1680x1050
12GB ram, 2x4GB, 2x2GB

Usually have 1 -2 VM runing as well as Windows. I do some light gaming of LoL (highest settings, get around 60FPS) and I'm looking into litecoin mining for when my PC isn't in use. I mostly browse the web and do some excel work. As well, have a couple of other programs that I use often.

Now, I am considering an upgrade to my rig. I have a spare 5850 lying around, and was thinking of putting it in my PC. However, my PSU doesn't have enough watts for anther card have enough plugs either. Based on my uses for the computer, please suggest an upgrade. Keep the price under $500.
Here are my options:

Upgrade to ~1000W PSU to be able to run 2 5850s in crossfire
Upgrade SSD to something between 250 and 500
Upgrade GPU (I prefer AMD over nVidia due to previous issues with nVidia)
Upgrade RAM so they are the same GB and brand
Upgrade to Win 8?!
Upgrade to i7 3770k?!

I don't understand where the highest end GPU would help me. Please explain.

If your not going to play the newer games and only league get the Tahiti core cards like HD 7950 or r9 280 for litecoin mining.

But if your going for litecoin mining u need like 3 of them to have a chance to mine some
