I m assembling a system with Ryzen 9 3900X proecssor and Gigabyte B550 Gaming X board. I would like to know which ram is better?

I m planning for 2 X 16GB = 32 GB.

As a general rule, the lower the cl number, the better (and more expensive). Do you have specific sticks in mind? I love G.Skill memory for Ryzen, but not all 3600 cl16 G.Skill sticks are the same even when we talk about sticks within the same family of sticks. For example, G.Skill Trident Z Neos 3600Mhz, cl16 come in 2 flavors:

A. F4-3600C16D-32GTZNC
B. F4-3600C16D-32GTZN

Option B (with no C at the end) has Samsung B-die chips while option A has Hynix. Ryzen systems can be tuned especially well with RAM equipped with Samsung B-die chips, and accordingly, they command a price premium.

If you are looking to build a nice gaming machine, and the question is whether you spend that extra $100 toward a top end memory kit or toward a gpu - don't overthink it, and get a better gpu. In this context, a 3600 cl18 kit is perfectly fine.
