CPU and GPU statistic help

Hello,
I've recently built my first PC and tested it out in a game. I used MSI Afterburner's On Screen Display and also tried Doom's Frames per second counter, however I was confused about some of the stats shown. Could you help me figure out what the two % indicators are to the right of the GPU temp in the MSI afterburner image, and also what the 'avg, min, max, last' stats are for the CPU row in the Doom overlay. I had a red number in the max column and was worried my PC was overheating.

CPU usage - 51%
GPU usage - 99% w/ 41% fan speed.

Ah right I understand that one now, thank you, but what about the Doom picture with the 4 column table avg, min, max, last for CPU and GPU? Thanks again!
