I just bought a Ryzen 9800X3D CPU and a Thermalright Peerless Assassin 120 SE CPU cooler,
and I got a Gigabyte X870 Eagle WIFI7 mobo.

The CPU fan ramps up when I'm gaming and it's too loud

The fan control thing is kinda confusing.

I set it to quiet mode but it still ramps up. I tried lowering the graph nodes but it still does it.

Idle temp is like 56C and when gaming its like 68C but the fan becomes like a tornado.

I think I figured it out, it wasn't the CPU fan that was making the noise, it was something under the "System 4 Pump"

right now it's around 62 degrees when I'm gaming under the new fan speeds

You have my answer in your first post. As for "something under the "System 4 Pump" You don't have an AIO or liquid cooler so it could only be some fan connected to it. Follow the cable from header to what fan is connected to it.
