Question Cpu overheats and shutsdown system Ryzen 5 7600X

I bought a Ryzen 5 7600X and put it in my ASUS TUF B650 Plus motherboard
I used it with an amd stock cooler for the first few days and seen that the temps were 65-80 when playing games but whenever i had around 75 degrees and tried to open anything else like a web browser the pc would just shut down so I fiddled a little and was monitoring what was happening so i found this

Whenever i open something the pc tempratures spikes alot from 45-50 degrees on idle and jumps straight to 70-75 even when opening a browser so whenever i had a game open and it would sit at 75 and i opened a browser i would see it jump to 96-97 or even more and instantly turn off
I've orded a AIO Coolermaster ML120L V2 and installed it as i just thought it was overheating cause of the stock cooler but the problem persists i installed my AIO everything is connected and works temp sits around 40 idle jumps to 60-70 when playing but if it goes a bit hotter like 75 in cpu demanding areas and i decided to alt tab and open any program the tempratures spikes up and pc shuts down again.

I tried undervolting, put it down from auto 1.40v~ to 1.20v and the problem is still here the pc case has coolermaster mf120 x4 fans and its decently chilled inside the pc case

is that AIO not enough aswell?
