I Currently have a R7 2700 but i am going to start streaming soon, it's a pretty decent 8 core 16 thread processorbut i wanted to ask if it's enough for streaming and would the stock Wraith Stealth be enough or should i just hop on the 2700x or 3700x bandwagon.

Specs:
Ryzen 7 2700
GTX 1080
Corsair Vengeance RGB 16 GB at 3100mhz
1 TB Western Digital HDD

Solution
the difference between 2700 and 2700X is that the 2700X is better binned, so it has high stock clocks.
so, thats a bad buy.

Your cpu is good for streaming, a 3700X would be better of course, but it's not that much of an upgrade.

If you want to make your streams better get an rtx card, and use the nvenc encoder.
though your current rig is pretty good for streaming.
