Question Desktop PC randomly shuts down, boot options unavailable until restart ?

I have a custom built PC, where I have recently started getting some annoying errors, where the entire desktop will randomly shut down fully (no BSOD), load into BIOS and say there are no boot options available. When I then hold down the power off button for a few seconds to turn it off, and then turn it back on, then it becomes available again.
I have a feeling it's a hardware issue with either the motherboard or PSU, but any advice for narrowing it down?

Have tried updating BIOS but did not seem to have any effect.

I also used to have common problems with the storage becoming corrupted, but that appears to have been fixed by updating from the Samsung 980 Pro to a new Samsung 990 Pro. Currently have both seated in the motherboard but the 980 has no partitions. The 980 is in the M.2_1 and the 990 is in M.2_2. Not sure if relevant any more...

For the sake of relevance, what BIOS version are you on for your motherboard?

Using Samsung's Magician App, did you make sure that there aren't any firmware updates pending?

Do you have any SATA ports occupied?
