two 290X in CF is exactly the same performance as 295x2 if the game able to properly take advantage both GPU. a single 1080ti will be a whole lot faster than that. and the performance is guaranteed in every single game since 1080ti does not have to deal with multi GPU scaling. even a single 1080 actually already faster than 295X2. and 1080ti already top 1080 performance by 25 to 30 percent.
In all those many games today that doesn't really benefit anything from SLI/Crossfire you should see a pretty huge performance increase.
But as it seems you are not in a hurry I would wait until the new GTX 11xx series are available in a not so distant future.
You might win synthetic fps benchmarks wit cf, but your gameplay is likely to be better with a GTX1080ti.
