So I ordered a GTX 760 from Gigabyte and paid the full for the 2Gb version only to get the 4gb version. What's the difference between the two?

There are actually no games currently, even for 2560x1440 that benefit from more than 2GB but that might change in the future. (there are rare exceptions of massively modded Skyrim configurations)

The new consoles (PS4, XBONE) have a lot more memory available so that should lead to PC's using more Video RAM.

Today, it's main use is higher than 2560x1440 such as TRIPLE MONITOR gaming in which case they may have TWO graphics cards (two cards with 4GB each is still 4GB usable as the memory is CLONED for SLI and Crossfire).

*Having more VRAM is never a bad thing though (unless you have 32-bit Windows then it can be an issue).
