Do almost all recent motherboards have UEFI rather than BIOS?

In my most recent PC, I've got the ASRock Z77 EXTREME4. It's a pretty nice motherboard, especially for a relative beginner like myself, and it has UEFI (the graphical BIOS) rather than an old-fashioned BIOS.

I'm about to build a new PC, and was looking through motherboards, and for many, they don't mention whether they have UEFI or not. Is it safe to assume that most have UEFI? How long has it been the case that this is the standard?

Most motherboards have had them since Intel's Sandy Bridge, I think. Plus, Microsoft requires motherboards to have UEFI in order to be Windows 8 certified.
