Generally, don't use SLI for purposes other than games as the process can cause issues. Again check the software. If you need the memory, remember than for rendering, as an example, only one card's memory is used.
It fully depends on the program you are using. There are a lot of HPC oriented programs that do take advantage of every little resource you can possibly dedicate to it.

Other less research / number crunching programs such as real-time-rendering applications for 3d modeling programs often/usually cannot utilize multi-card setups.
