I'm trying to setup an older laptop (close to 10 years old) with dual monitors, mouse and keyboard for work related purposes. The work involves running a program and isn't very intense. The laptop only has 1 USB port, 2 USB C ports, and no HDMI. Is there a way to set it up with dual monitors? I think the solution is to use a docking station but I'm not sure with only 1 USB port if this will work. Can someone tell me if this is possible and what is the easiest way to do it? If I need a docking station, is there a certain type that I can only get? Would I need to end up getting a new laptop with HDMI?

If the USB ports on your laptop has downstream capabilities, which it should have, you can use any docking station or even a display adapter like this...

For docking station, the selection should be based on the type and number of ports you need. There are all sorts of combinations/configurations out there.

The only limitation I can imagine is a restricted firmware which some older machines can have, in which case you might have to get in touch with the manufacturer.
