does my motherboard support surround 7.1?

my motherboard: msi h61m-p31/w8 (ms-7788)

Thats a datasheet of his adapter, not of his motherboard.

The audio adapter supports 7.1 but the motherboard by itself comes with ZERO ways to output 7.1.
You have no HDMI port so that is out, no optica/digital coax jacks (those cant handle 7.1 anyways but just stating), and you only have 3 audio ports so at best you can have 5.1 by using the mic and line in as outputs for the other speakers.

What exactly are you trying to send 7.1 audio to?

Your motherboard chipset does not matter then. That is a USB headset that has its own DAC (bassically a sound card) so it will processed the 7.1 not your motherboard.

Yes it will work. Just plug it into a usb port. Done.

... yes ... the USB DAC is built into the cable that connects the headset to the USB port on the computer. The logitech software that you will install works with the dac to make virtual 7.1.

I have the 930s that are just wireless 430s and it works pretty well.
