From my experience yes. It's not the memory module that dictates whether it will work in single, dual, triple channel, etc... It's the motherboard.
I'm currently running 2x8GB kingston Dual Channel kit on my X58 triple channel motherboard and have zero issues.

Maybe. It's not 100% guaranteed, unless you buy them as a matched pair. RAM can be extremely picky about how it works, you may have zero problems doing this, but you are just as likely to end up with 2 sticks that won't work together, even if they are exactly the same brand and model number.
