She is insisting on two monitors. She thinks its cooler than an ultrawide....shes 13.
In the end it will be your choice. I can tell you from experience that gaming across 2 monitors isn't nearly as nice as a single ultrawide, the bezels are annoying no matter how thin they are. I also feel that once she would have one massive monitor she would think it is cool, but I don't have kids so I cannot answer that for sure. Here are a couple choices of 1080p monitors that would be a decent choice.

What is your absolute budget for dual monitors?
 
is this to game in an extended dual display setup, or to use one display for gaming while the other handles regular desktop?
what does this typical 13 yr old girl play; how demanding are the games she wants to play? what resolution, frames per second and graphics settings is she looking to play at?
how large is the desk and what is the distance from it she plans to be sitting?

you could be looking at cheap lower quality smaller displays, value-minded larger displays, nicer HDR color options, high resolution/high frame rate options.

there is a lot more to choosing a display than just "value minded" and age.

Could even look into Ultrawide to save on absolute desk space, while giving dual monitor functionality.

Thank you so much. I think she would want the games to appear on both screens. I also think she plays minecraft and toblox. Maybe dome graphically intense games every once and a while. I think the pc in the link should do. I'm really just having issues with what monitors, cables, and converters to get that will work with that video card. Thank u so much.

the resolution and frame rate you are trying to achieve determines the display you need to get. and the graphical quality you are expecting to achieve also plays a part.

due to the limitations of that card; if higher frame rates, you will have to go with lower resolutions and vice versa. and the display will have to support the resolution and the frame rate/refresh rate you are trying to achieve.
your average lower spec gaming system usually attempts to run at 1080p resolution / 60Hz refresh rate. you should make sure you/she is not trying to achieve better than your average lower spec results.

this GTX 1060 card should have ports for any input you would need; DisplayPort, HDMI, and DVI available. any decent modern "gaming" monitor will usually have all three available.

At that budget you can get a single ultrawide monitor. I went that route 2 years ago and haven't been sad at all.

Both of these you would use either HDMI 2.0 or DisplayPort 1.4 cables to attach to the computer.

For the budget and her needs you far better off going with a 21:9 ultra wide over two 16:9 monitors. This way she won't have bezels in the middle and 21:9 is a much more immersive gaming. The larger resolution ones can do two windowed screens (ex: game & web) easy as well.

This is my recommendation, connect via DisplayPort and it should work with the adaptive sync as long as she has the newest Nvidia drivers download for that GPU.
