Is this enough power for an i7-8700k on an ASUS ROG Strix Z370. I plan on only one NVMe SSD and a Kingston SSD and a video card more for video processing than gaming?

overkill depending on the gpu, not needed unless you plan on dropping in a gtx 1080 ti
