Hello, this is my first custom pc build. I plan to use it for mostly gaming and youtube. I eventually am going to make a custom water cooling loop for overclock and looks. I will also replace the 960 gtx with a 1070 when the price drops down. Any reccomendations to what I should change ?

Much better PSU and better GPU. If you want to get a Pascal card I'd recommend not buying a GPU now and just saving up a bit more for the 1070.

Solution
Get 2666Mhz or 3000mhz ram.
I prefer gigabyte motherboards over all other brands. Never had any problem with gigabyte.
Everything else is good except power supply. Why get a sub par power supply? Get a quality psu. A good 550w will serve you decades.
I assume budget is $1000.

Reduced one fan. The define s already comes with two case fans. Get more fans when you make custom loop. You know good custom loops will cost you $300+ right? IMO custom loop water cooling is only viable option when you have high end components to start with, not with i5 and gtx 1070. I would get a better monitor or better cpu with the custom water cooling money.

Edit: If the build is out of budget, get this $100 motherboard - http://pcpartpicker.com/part/gigabyte-motherboard-gaz170hd3p
