First PC Build in Future

Hello there, it's my first time posting in these forums and I would like to ask about your advice concerning a future PC Build.

This will be the first build I will be doing since I have owned laptops pretty much from 2006 and I have always been pretty ticked off that a decent laptop gets outdated in a year or so when talking about gaming. I always bought the upper mid range gpu laptop (Currently a 2012 Overclocked GTX660M). I have decided to save up till Q1 of 2018 and build a real PC that would be dedicated to gaming and keep my old laptop for school work.

Now at the time of Purchase my budget would be about 1500€ -1700€.

I have (and will probably not change) a 32" 1080P 60Hz TV as my "monitor" and I have grown pretty accustomed to it. Now I have read up on the news and the new generation Volta GPUs, the next gen 8000 series I cores and maybe DDR5 memory should be coming out in the beginning of 2018. The main thing I am concerned of is what GPU should I buy for the system which would look something like this (Using current pricing in my country):

Case: Corsair Carbide 400C (93€)
Cooler: Deepcool Gamaxx 400 (25€)
CPU : A future i5 8600K (Would like to Overclock) (260€ for a 7600K)
HDD: 1TB 7200RPM Western Digital HDD (51€)
SSD: 240GB Ultra II Sandisk (104€)
PSU: Corsair 650W VS Series ATX Bronze 80+ (60€)
RAM: 16GB DDR4/DDR5 (132€)
MOBO: A future Z370? for about 150-200EUR~

GPU: Now here is the main question, since I will be gaming at 1080P 60Hz Ultra, I guess buying a single 2080 (700-750€~) would be major overkill, however I want the GPU to be strong in the future. I think that the wiser choice would be to buy a single 2070 (450-500€~) and then buy a 4070 (450-500€~) later down the road since a 780 is literally squashed by a 1070 today. What GPU do you think I should buy?

Q1 2018 is ages away, tech moves fast, and everything we recommend will be replaced by better value better performing stuff in 6-10 months anyway.
even two weeks away is too early to be planning, come back a few days before your purchase date and we'll make an updated list.
