Overclocking: Maybe, no idea what i would be doing but i might experiment before upgrading the CPU to a 13th or 14th gen I5-I7 etc.

And Most Importantly, Why Are You Upgrading: got fed up with console limitations. i'm choosing this sort of set up as i want to get up and running soon but happy to just have a functioning computer for now. my budget is only a few hundred a month but as its my birthday this month i can get a lot of bits as presents. i cant afford a decent graphics card atm which is why i chose an integrated cpu to at least have it running for now. the plan is to get it running for around 6 months then buying a decent GPU, then a few months later, get an i5/7/9 of the 13th or 14th gen. many thanks in advance for any help or direction.

The IGP of the 12100 will not play Fallout 4. 16gb is becoming not enough either. I only play WoW, and have exceeded 16gb ram usage, and that game is almost 20yrs old. CX750 is not a very good quality PSU either.

The GPU is for reference only. To have some idea of the cost and PSU demand. If you want to upgrade to a 13/14gen i5, and a much more power hungry GPU, 650w or 750w PSU will be needed.

The motherboards are all more or less the same. Some people have had bad experiences with certain manufacturers and there are some boards to avoid but the ones listed in this thread are all good picks.

The reason you don't need a z690 motherboard is because you are on a tight budget and don't need the flagship chipset. It allows overclocking but only on select CPUs, and your 12100 is not overclockable. It's a good pick though, esp. for the money. You won't need overclocking anyway.
